I would like terrain upgrades and the jungle villages seem great! I think we also need tundra villages and there houses are igloos. We could also have shipwrecks filled with loot in the oceans!
I really do think that jungle villages would be a great idea to be implemented in minecraft it would bring in a new experience to everyone and who says that having a little adventure won't be fun at?
I have to say I think that making the game harder the further you get away from spawn is not such a good idea. The problem with it is that you restrict exploration for a section of players. If you want the game to be relatively easy because you're a builder you're stuck with having to build at spawn. If you're on a server then the area around spawn will get built up very quickly and you'll have nowhere to go.
However, the idea of making certain areas of the game harder isn't bad in itself. For instance they could make, let say a volcano biome with lava spilling out of it, blazes flying around and some horrible monster at the top and have them spawn fairly rarely, like mushroom biomes. If you wanted to just build in relative safety then steer clear of volcanoes if you want the game to be harder then build your house at the bottom of one and climb it every day. You could add several of these rare hard biomes, dark forest, ash plains, fire swamps etc. to add a bit of variety.
But making it a blanket more difficult away from 0,0 is kind of a bad idea.

One thing I think would be interesting would be ruins. Like inside the large mountains, there would be a very small chance of finding a small tomb or a small abandoned city.
I think they should add more fantasy biomes, like 'The End' biome. That's why I like terraria because of the 'corruption' and the recent 'hallow' biomes. They are very cool biomes!
I think 1.7 should be terrain and combat overhaul update. Terrain generation needs a bit more work, and it would be good if Mojang would implementCubic chunks into Minecraft in the progress. Combat also needs to be improved. It's kinda boring nowadays as we do not even have a proper block.

One thing that I want to see in regards to fixing combat is armor tiered speed diminishing. It'd go something like this:
No Armor: 0% Speed Reduction
Gold Armor: 0%
Leather Armor: -10%
Iron Armor: -25%
Diamond Armor: -35%
This way, it would encourage players to want to use lower tier armor if they want to be more flighty. If a player wants to wear heavy duty armor like iron or diamond, they'll have to deal with a lower speed of movement. This would also encourage a player to use gold armor, as it would grant gold an actual use as armor - lack of a speed reduction.
Not only would it balance armor tiers more, but it'd give more reason to ride horses. No matter your armor, if you ride a horse, you'd go the same speed on the horse.
I also believe that health should regenerate slower, especially depending on the amount your hunger bar is filled. To compensate for this nerf, a small health boost from eating an article of food would be granted (depending on the food, of course).
Some nerfs on the Fortune (making the rate of multiplied drops lowered) and Protection (all protection enchantments would have slightly lowered damage absorbing) enchantments would be nice, too... but I'm probably going beyond my welcome with tweaks to mechanics.
A Nether Village would be cool with Peaceful Undead Wither Skeleton Villagers that trade A new Item Called the Corrupted Emerald and you get Quartz 'n' Stuff from them (Quartz Gear, Nether foods (Nether Wart, Flame-Cake etc) etc)
