Okay, your argument is horrible, but just to entertain you, here's some food for thought.
You're right.  This does make things easier.  In Single Player.

In Multiplayer, a lot of survival servers are PvP-friendly.  If horses are abundant from the start, the range at which your base would have to be in order to not be detected by incoming PvP/Griefers increases exponentially by how abundant they are.  This would make things a hellish fustercluck (if you'll excuse my fowl language) rather than easier.

Having to loot dungeons and such encourages players to adventure. No it does not. It forces them to. Having no crafting recipe makes saddles a limited item that will run out unless you want to travel a few kilometers to a dungeon.

Crafting recipes for saddles allow them to be a usable resource, all the purists and OCD freaks are not going to use a saddle if it has durability or if they lose it they have to spend a few hours finding a dungeon just because they are unlucky. Non-craft able saddles basically enslaves us into the annoying process of finding a small box hidden underground that is for some odd reason considered a dungeon. On top of all this, dungeons/temples/villages can be found at spawn making it a quick but limited item.

There is really no valid argument that can go against a crafting recipe. Minecraft is a sandbox, we should be able to obtain things legitimately and in an enjoyable way that branches into new functions and additions to the game (a sandbox should keep expanding off of what it has as well as new features or else you are left with a large game of empty features that never got fully integrated with everything else). Break the saddle into 3 parts (technically 4 items) Saddle and mouthpiece which will be added to the horses inventory or simple right clicking (Whatever happens) and then to make use of strings new function they should be crafted into a twine or rope (This allows the commonly wanted feature of rope) with a door shaped crafting recipe of 6 string. To finish the saddle the player now right clicks on the horse twice with both pieces of twine/rope adding the final component: the reins. That way horses can be tied up with the reins changing from behind the horses head to in front of the horse and hitched to a fence.
