I don't understand your mind. How the hell do you think grass works? It drops dirt, but grass with silk touch.
Basically, you want more iron and gold. Why not just go into creative mode if you want that?
Cause that would be over powered, cause iron and gold are common enough already.

Then you'd lose Iron/Gold Ore blocks are decorative blocks unless you had Silk Touch, which is already helluva hard to get.
Sorry, I don't really support this. Sure, maybe it would be more "logical", but Fortune enchantment is already more than powerful enough as it is, without it also boosting iron and gold harvesting.

For the record the reason I want more Iron and Gold is because I build big railways, with fortune Diamonds are quite common compared to gold!

The Iron/Gold Chunk can then be smelted into Iron/Gold Ingots.
I support this, since it would help provide for a more extensive minecart Rail highway system in the mid- and endgame phase, but I think that the Ore should have a chance to drop more (1-2/3 with max of 5/6 with Fortune) to help earlier in the game, rather than just those far enough along to enchant.
Also, the "It could still be made back into a block if you really wanted (like Glowstone can be)." part should be taken out, as this could be used for a potential infinite Ore loop, not that there aren't duplication glitches now, but no sense adding another one.

But as for the idea, I really don't see a need. I make rail systems thousands of blocks long and I'm never short on Iron or Gold, and that's playing vanilla Survival. Wouldn't hate it if it was added, but don't see a reason to change it.
