So when I enter a server, I try to get as far away as possible. As the X & Y axis grows I'm forced into a swamp. If I find one and I have absolutely nothing, do I just run?

It's easy to kill a witch. You take a SPAS-12 or Auto Shotty and crown her.

Armor is pointless against the witch, since potions only affect your Health, not Armor points, You should keep on eating enchanted golden apples or anything that regenerates the Player health, during that, Keep hitting the witch until it dies. But since you got nothing and if you want to kill it, simply run towards it, dodge the potions and keep on punching it at a corner, the witch will try to heal,so keep on punching until it dies.
