I've had some success with mushroom farming. I built a 7X7 room with a ceiling 3 blocks high and a dirt floor. In the center of the ceiling, I dug two blocks higher and put a torch at the top (that makes it 5 blocks above the floor). I planted two mushrooms in two corners of the room, then went mining for ores. On my way back, I had one new mushroom and a few mobs to clear out. It takes a long time for the mushrooms to spread, so, have something else to do in the area while you wait (such as dig for ores, build a house nearby, hug a creeper, etc.) This also works as a decent mob spawner for gathering drops (arrows, gunpowder, string, and feathers). Hope this helps.

put 1 torch on each wall and close up the hole, also use the trapdoors.

My working mushroom farms are 9x9 rooms, three blocks high, torches spaced around the room on the walls 3 blocks up. Dim enough for mushrooms, bright enough to prevent mobs. One floor is obsidian, one floor is wood.
Technical details:
From the information I've read (which is primarily oriented on the PC version, but may work the same (mostly) in PE), torches emit light at level 14. Mushrooms need light level 12 or less to grow. Hostile mobs need light level 7 or less to spawn. The light level drops 1 for each block away from a light source. So, 3 blocks up with a torch is 14, second block up is 13, bottom block is 12. Space the torches close enough so no block drops below 8, and mob free.
I've also read somewhere that mushrooms will grow on any non-transparent block. As I have them growing successfully on both obsidian and wood, I'd say this is accurate.
Actually here is where I got most of my information:
Mushroom Farming Tutorial
It mentions recessed lighting, I just did a 3 high ceiling for the whole room. If you do an abnormally large room, you may need to put blocks on a 3 high ceiling for torch placement.

I just place 1 mushroom anywhere during the day, don't sleep, and come back with many mushrooms!

This might sound like a stupid question but what do you mean put trap doors in there where would I put them and what would they do?

I had no success with mushroom farming until I did the following
Cleared out a six by six room underground
Made it three blocks high
Put dirt on the floor
Now a two block high room
Put three red mushrooms in a diagonal line ( saw that from farming wiki)
Put stone blocks above whole thing leaving only one block space above each mushroom and dirt block floor
No mobs due to only one block height
No torches
Spawned mushroom as I stood there
Good luck

I just dug into a hill 4 blocks deep and then built a fence in the opening. This keeps enough light but not to much and it is easily accesible.
