I like spider jockeys/bosses/zombie pigmen, for they actually have a challengee alone, and you dont need to be fightiing a giant group of mobs to be challenged, (except for the pigmen, as they auto group up on you, which is challenging.)

Wither, because it's a challenge and you get a star for a beacon after, and also horses, from the Mo Creatures mod. So majestic.
