Make a new folder called backups
Go inside the folder and press Ctrl+V
Your Done
Or you could get a bukkit plugin that backs it up automaticly every hour or so.

I would highly discourage the backup method of copy/paste. Rather, use the process of archiving your server (e.g., zip, rar) which will not only save you space, but put it in a neat, tidy package you can use for keeping track of several days (/delete at your whim).
In Windows, right click 'send to compressed folder' will turn it into a zip, though even better programs exist such as 7zip.
