Intyre and I are working on flat map and other map generators. But it will probably be another week before we release it. Deeper oceans, anyone? Caves, anyone? More ores, anyone?

If you want a really flat map, you can get a flat map from the Maps section. I recommend blafbello. He's good.

These all seamed to be the opposite of flat especially "infinity" which is cool in its own right for floating island and crazy landscaping.. was something changed?
Running MC:PE alpha 0.3.3 is there a seed that is mostly flat.. Like no more then 15-20 blocks variation on e land masses, and maybe not big expansions of ocean and ice..
