A short while ago, Notch talked about some of the exciting behavioral changes in animals for 1.8 - most notably, how they will now flee when attacked, rather than stand there and stare at you. This ended up having the added effect of wolf attacks looking more "natural", in a sense, as prey would now flee its attacker, rather than look around blankly and grunt. He went on to say that - due in part to the behavioral changes, and a desire to see more dynamic mob-to-mob interactions - he is beginning a super-secret weekend project! What does it entail?
Wonderful, now Notch needs to add small woodland animals and eagles/hawks, id love to see one circling in the air and swoop down to snatch a squirrel >=)

This is actually cool from a A.I. point of view. The terrain has a rather complex cellular automata A.I., something that can be easily mirrored in the mobs.
Imagine if, when threatened, a group of cows huddled together facing out to defend themselves. Alternatively, sheep may benefit from a modified "boids" A.I, causing them to flock together and move in the same general direction as the closest sheep nearby.

sheep.direction = (closest.sheep.direction + 2nd_closest.sheep.direction) / 2 + random(-15 to 15)
Something like that would cause every sheep to interpolate the direction of the 2 closest sheep, while adding a small offset for more interesting flock movement.
What I'd love to see is animals/mobs that don't despawn so quickly. That's a big problem in sandbox games for me, look on way and something disappears in the other direction. Makes the world feel like less of a sandbox and more of an empty void.
