I think that adding hunger depletion would be a nice addition to this mod. I really like farming in Minecraft, and I want to actually have a use for it.
When it comes to Kristjan's suggestion, I think it is up to you. Personally, I have used inventory editors often, and I don't like having just water in my inventory, without a bucket. I think it would be the same for fire. Just a flame hanging out in your pocket. But, the recipe for blaze rods is a bit costly. The choice is, do you want to add a way to craft fire, or a whole new item, chain (and keep the blaze rods with their current recipe)?
I always thought that crafting chain armor out of pure fire was a little strange, but this is Minecraft after all. Well, you can tell which one I prefer.

Try checking out the Peaceful Pack that was listed in the OP. I haven't checked, but I believe it uses forge.
Also, I would recommend looking for a mod, I believe it was called Harder Peaceful. I think it is Forge compatible, and makes hunger go down in Peaceful mode. Also, stop potato farming. Now. Use the extra space for wheat or carrots. Seriously. Carrots grow at the same speed and heal you more, along with having other uses. So. Yeah. In case you couldn't tell, I don't like potatoes. In game only, of course. They are quite tasty in real life. Annnnd I'm off topic. Yep.

1) I have two ideas. You could include the mods in a mod pack, allowing both as either separate downloads or one single download.
Or, you could give rubies some kind of purpose in this specific mod. I assume you want to keep away from adding anymore new blocks, so perhaps include rubies in some of the higher tier recipes, such as blaze rods and nether stars. If you do want to have rubies to have their own function, I could imagine something like a torch, that attracts/repels mobs, be they hostile or not.

--My highly (un)trained eye tells me that you re-textured string to make chain. Keep in mind that chain is actually a ring of metal, linking a bunch together makes chainmail. I would relate your current texture to steel wool or metal shavings, and nobody goes into battle wearing steel wool. Perhaps create something that looks more like a chain? Though I say that, what you have works well.
And, after this whole post, I remember that my laptop has only just this morning crashed, and I have yet to get it to work. So although I can't give much feedback for now, I will continue to watch this mod grow. If I can get my computer fixed soon, I will certainly explore the rest of this mod. (I feel like I am over-dramatizing this though, I should have it fixed in a few days.)
I like it. I had been interested in Wuppy21's Peaceful pack for a while, but I felt it added too much. Downloading.
My questions:
--What purpose do the rubies serve? Can you do anything with them other than decorate? If they are only for decoration, perhaps have the ore block drop multiple rubies, like Lapis Lazuli.
--What texture pack were you using in your video?
My suggestions:
--Personally, I would prefer a simpler recipe for slime balls. I guess slimes aren't very easy to find in vanilla, and the recipe isn't that complicated.
--I think the output of iron to chains might be too high. Perhaps reduce the number of chains gained to only two, or require another component, like string.

Reason for asking to join: I was looking for a new server to play on, and my recent no-whitelist escapade has not been favorable. I would like to join a selected community that is at least semi-filtered to stop just anyone from joining.
I have both run my own server and been an admin for many other servers as well. I have much experience with mods and other things to do with servers. I have played Minecraft since Indev version, and would be happy to lend a hand in anything.
