Bed or no bed, people will "skip" the night anyway if they want to.
Beds make everything a whole lot more convenient. And just because you prefer to do work during the night doesn't mean everybody else has to. And it's currently a bug that time doesn't pass when your sleeping in a bed. Mobs should be able to attack you while your sleeping.
And they do not definitely screw up multiplayer. Bugs aside, it helps a lot when everybody on the server wants it to be morning again.
Its called some people like to hunt monsters. To get sulphur, string, feathers, and bones which give off bone meal. So do you think people really wanna go on multiplayer if they cant get those esential things to make alot of good stuff?

You can always just pretend like they dont even exist, since the way other people play the game doesnt concern you at all, unless you're the kind of person that think the only right way to do something is yours.
