The landscape is in desperate need of some variety. As everyone has already mentioned, the 'random' element has been reduced to nil. I miss my desert mountains and frozen oceans.
To be honest, I personally think that the ending is absolutely terrible in every aspect. Aside from going completely against the very nature of the game, it's also really, really, really long.
Minecraft doesn't primarily rely on graphics cards/chips, but rather on processor power and RAM. On that note, laptops are not easily upgraded, so I don't know how to help you there.
I assume only Enderdragons will make it into the game, but it would be nice to have a regular type of dragon that would function as a boss in strongholds or mineshafts.
Were I to hazard a guess, I'd say that since they're supposedly incredibly tough to kill, the reward for killing one would have to be fairly meaty. I'm thinking something along the lines of scales, teeth, and the like; perhaps for crafting a dragonscale/bone/tooth armorset/toolset. A guy can dream, right?
Things have been rather dead around here lately, any requests from the fans? I'd love to get back to work and currently don't know what I should do next.
If you haven't done it already, the Doku Continuation thread has a neat design for the enchantment table.
While I have nothing against you, SabbyKat, and in fact agree with you on most all of your points, I find it difficult to take your opinion seriously when you berate any member who tells you why you're 'wrong'. You know, it's entirely possible to have opposing viewpoints without acting like a condescending jerk.

Edit:
Noticed a disparity between the color of snowed-on grass and bare grass.
