I'm more of an explorer than a builder. When I build a structure, I keep it pretty modest, but still like for it to look good. I build my home according to my surroundings. In a really hilly area, I might build my home in a cut-out cave system. In a flat, swampy area, I may just build a simple house near the water.
If I find a place I would like to come back to multiple times while exploring, I may mark it somehow so that I can come back later and build a minecart station for quick traveling. In the case that I make a second home far, far away, I would rather make portals for quicker, more iron-friendly travel.
I mainly hunt out huge cave systems, because I like the thrill of going face-first into dangerous areas.
TL;DR I don't always build. But when I do, it's for protection or efficiency.
Also if you are using the downloaded client, you can probably try a force update when you start up Minecraft, by clicking the options button on the launcher.
So I was down there, without really planning out how to get out, when night suddenly came...
I had also left the spawner... I like using them for mob-oriented projects.

It was very disappointing I pretty much hit stone, even in the area that was mostly gravel.
