I personally always hated bricks. Collecting a resource that is useless besides building, having to cook it into a resource that is 100% useless besides a crafting recipe, just to get the worst looking block in the game. If it wasn't for the Tinkers Construct mod, I would avoid clay all together.
I cant stand pure vanilla anymore...after having Inventory tweaks, I'm constantly middle clicking to sort chests, and when it dosnt happen in vanilla I get ticked at the next 20 min of sorting.
I like my ore doubling, I like my tools that dont break, and just cost resources to fix. And I love my little turtles that mine huge holes in the ground while I go off and watch an episode or 2 of anime.
That said I can live without that stuff. But I can NOT live without my middle click sorting.
As with every update, new chunks generate based on the version you are using. as long as you dont switch to 1.8, gen new chunchs, and go back to 1.7, you should be good to update and find the new things. Like BUNNIES!
If you are running on a PC that dosnt do good with modpacks, try just adding Tinker's Construct, Thermal Expantion, and Thaumcraft. None of these produce much lag, they all work well together, and you only need those, NIE, and maybe something like InvTweeks, and it feels like a whole new learning experience. I personally took the FTB lite pack, and just added a mod or 2, and I was able to play on a laptop with 4 GB of ram with minimal lag.
Seems I'm quite odd in this sense... I love flat-ish land, love the roofed forests, hate birch forests (burn white trees...burn), and dont like amplified( to much jumping. and trying to navigate things.)
Though I like dd/MM/YY better...the crappy american system will be engrained into my head untill my watch stops saying YY MM-dd (and yah, spaces and all....wth watch.)
If you want to play with any mods, FTB or one of the other packs is the best way to do it. Its hard and annoying to do manual mods after 1.6.4 due to the way the launcher works. The FTB launcher does everything for you, is constantly updated, and if you want to play with only 1 or 2 mods, there is a pack called FTB light that is bare bones, and ready for anything you'd want to do.
When 1.9 or 2.0 comes out and we have the plugins feature out, then mods will get easier, untill then, its only going to get harder to manually mod minecraft. This is on purpous, and is working towards getting rid of mods, and stoping messing with the sorce code, and move everything to plugins.
TL;DR If you want to play with mods, download FTB or Tekkit or another pack launcher.

Deffinatly something that goes on top of my mods list...once i get around to playing mods in 1.7....
So yah, when the plugin feature comes around this will be one of my first downloaded
