I get a kick out of kids who think gaming is something new. In 1911 and 1913 H.G. Wells (yes, The Time Machine guy) wrote two books on battle simulation games. Little Wars and Floor Games. The full text of both books are available on project Gutenberg.

All the times I beat the dragon the end gateway led me to a place not so far from a end city.
I suggest not going straight ahead infinitely in one direction. Instead, search around a circular area centered at the point where you just arrived.

You can build many different types of stackable farms, like sugar cane, etc.
You can also build stackable wheat/carrot villager auto farms.
Or you can just fill the first layer with ice, than brake it to turn everything into water.

I'm a 37 year old guy who plays with two kids (10 and 7). Just Vanilla, at home, no mods. It's nice to see I'm not the only "daddy" playing with his kids

In my opinion those new "glazed" blocks doesn't seem to belong to the game. On the other hand, concrete blocks are well welcomed. It would be nice to have stairs and slabs of these blocks too.
It's hard to think on a good place to use those "carnival-like" blocks anyway.
Easy solution: do not use them if you don't have to
