You haven't. There's always a bigger and better building. There's always a more efficient/aesthetically pleasing/interesting farm. There are always improvements you can make.
If you are feeling uninspired, move. Just leave the area, bring the good stuff, and don't go back. Build again, expand an empire with straight roads. Instead of trying to save your old home, leave it to rebuild in a nicer fashion, now that you can.

So yes, go build a floating city somewhere. It'll be worth it in the end.
You can't do everything in Minecraft. From the title, you are saying that you've defeated the Ender Dragon and the Wither, brewed all types of potions, made your World more than 1GB, threw diamonds in lava, etc. If you haven't, then do it.

I don't see why everyone is finding it hard to believe some people have done just about everything. As someone who has spent thousands of hours on a single world I can verify that you can easily become uninspired until a new update comes out. I usually just mine endlessly (now with Haste II beacons) or try to think of something else to do until an update comes out. However with 1.5 and 1.5.1 out I've had a fair amount to do with redstone creations, automating my farms and combing my books.
As for the rest of you, just because you don't have the time or patience to do it doesn't mean that someone hasn't done all of the following.
Beat the End Dragon
Beat the Wither
Made all types of non mob farms (melon, pumpkin, potato, carrot, etc)
Made an Overworld (Passive) mob farm
Made an Overworld (Hostile) mob farm
Made an Enderman mob farm
Made an Iron Golem farm
Redstone creations
And potentially...
Wither Skeleton/Zombie Pigman farm
Perfect Sets of Tools/Armor
All Achievements

Not everyone makes inefficient expired farms. Some such as myself make sure to look up the most efficient design possible at the time of building. A lot of farms don't get outdated for a long time such as the well known Enderman/Iron Golem farms. As for aesthetics not everyone cares as much about that as functionality.

As far as I'm aware most great designs have already been made and pretty much perfected. They are until a new version comes out and then it's possible they they are outdated short term.
Quad wither skeleton XP farm? I'm fairly sure that it's pretty hard to find a stronghold with that type of generation to make it viable. Even if you did find it I doubt it would be that much better than a normal one similar to the following. Yes all of the possibilities would take a long time to make, however a good efficient version of every type of farm would not.
This isn't about myself. It's pretty obvious that you can only get so efficient with any type of farm in the game because there are limitations.
If you've already killed the enderdragon and the wither make a complete beacon using the nether star. That means a 164 diamond block pyramid, which is 1476 diamonds. Now that I think of it, did Mojang even intend players to build a complete beacon? Because that's a lot of diamonds.
And, much later, build a road back home.
