hello, i was wondering if theres anyway to run a minecraft server on a mac no matter what so it would be up all the time even when locked and turned off/logged off. I'm just using the server tool downloaded on the official website.
now this is just thinking.
is there scrip that can set up time to stop server and put computer to sleep and then wake up at another time and start server?

You don't need a rented server to keep it on 24/7. All you pretty much need is a desktop (recommended) that can stay in 24/7 without going to sleep. If you own a windows just go to your power settings and go to the part which says sleep or turn off display. You can set sleep to never if you want it on 24/7. You can also host a server from a web host or from a cloud. From a cloud if it has it's own port you can host your server 24/7 with an IP and everything. I host mine from my computer btw and it runs good.

There is something called wake on LAN that uses a method to wake the computer up. However, you'd need a second computer running to do it.
Your computer cannot process if it's in a sleep/standby/off mode except for specific interrupts.

As for simply shutting down at a fixed time- I'm sure that's a achievable; but couldn't tell you how specifically.
on topic, just rent one from hosting companies.
