Yes, Coreprotect is the best one for this. Works on 1.8.8 and can confirm it also works perfectly on 1.9, in case you need that in the future.
Basically, after you install the plugin, it starts logging everything players do to the world. Placed/removed blocks, interacted items, etc, is all logged.
Then, you or anyone else with permission can do "/co i" to turn on inspector mode, and left clock a block to see who placed it, or right click a block/container to see who placed it/interacted with it/etc.
You can also roll back areas if a grief occurs.
I've used it on my private server to settle disputes and griefs quickly and easily since 1.6.

If you want a simple, easy to use and pretty much everything you need I would use LogBlock. It's really nice, I use it all the time on my servers. http://dev.bukkit.org/bukkit-plugins/logblock/files/ if you need it to be more updated, just go to curse.com and search it up.

Ditto. Coreprotect is good, but I like LogBlock's interface better. They both will get the job done.
I prefer CoreProtect, it also helps us with fire and doors and alot more
You make it sound like LogBlock won't do fire and doors; it does.
I vouch for Core Protect because it also has the ability to rollback areas that have succumbed to damage.
