The Windows 10 Edition is a fork of the Pocket Edition, so anything not in PE won't be in W10E and vice versa.
For stone-related crafting, the Pocket Edition has a special block called the "Stonecutter" that you can use to craft things you can't with a crafting table.
Pressure plates can't really be used without redstone, so I'm assuming they're not in the game due to there being no redstone. They've confirmed an update that adds redstone with redstone-related blocks to be released in a future update.
Redstone or no redstone (the ore is there, but the dust isn't), you can't craft a pressure plate (or several other things).... yet.
Don't forget 2 things: 1) it's beta, meaning it's incomplete and there's more fine-tuning, and 2) it can't be like the PC (or console) versions.... cause it has to run on phones too.
I've mentioned this before, but let me include this thought: There's no telling where the Win 10 version is going... but I wouldn't be surprised if it ends up with it's own "goodies" that other versions don't have, especially the iOS/android version (MS might want to make this one "special").
I love the speed of the Win10 MC over the Java edition--it's like the difference between BASIC and ML on the old computers--but I am a little frustrated with the lack of some of the blocks so far. I know that it's beta and that more is coming out, but that doesn't eliminate my impatience while waiting for key blocks and mechanics to be added to the game. I wonder when we will see an update?
For now, without redstone dust (placeable restone, whatever), you couldn't use pistons, levers, switches, repeaters, etc. anyway.
There's several differences between PE/Win10 versions and the PC . For instance, you don't need a redstone torch to make a powered rail work- in PE/Win10 they're always on. Minecarts work without any powered rails, but powered rails do make minecarts travel faster. Another: you don't have to smelt redstone ore to get redstone- the breaking of a redstone block immediately releases the redstone.
Yep, there's numerous things missing, but some will be added later (like maps w/coordinates), some (like probably commands or mods) may never get added.
Patience- there's only been 1 update so far. It's got a long way to go.

* Fill all 9 squares in a crafting table with Paper to make an Empty Map.
* While holding the Empty Map, use the "use" key, or right click the mouse. You get a Filled Map (w/o a marker).
* Take the Filled Map, put it in any outside square of the crafting table with a Compass in the middle square. You get a Filled Map With Marker. 2 Notes: 1) A Map covers an specific section of the world- it is NOT centered on your location when you add the marker nor on you when you created the map in the first place. 2) The top of the map is East, not North.
* To zoom the Map out, put the Filled Map (with or without the Marker), in the center square of the crafting table, and surround it with Paper. Each time you do it, it zooms the map out farther, and you can do this up to 4 times. (Hover your mouse/cursor over the new map before you pick it up and it will tell you the scaling).

EDIT: one final note I learned the hard way:
The Marker works great in the map. If you go off the map, a Dot along the edge shows you the opposite direction you need to go to get back on the map (but there's no arrow, just a Dot, so you figure out the direction). However, if you keep on going and get too far from map, the Dot disappears(!) and you have no idea of which direction to go to get back on the map.
As I've said many times, build your home/base near the spawn point. A Compass will always lead you home no matter how far you wander.
I've come across some recipes that are missing from Win10 Ed. Beta.
The cobble stone stairs and fences are a couple.
