Since it said the problem was in the character's NBT, I guessed it might be the result of the mod Trinkets, which gives an extra slot for the Elytra. I opened my level.dat file in an NBT editor and looked through it for something related to an Elytra so I could delete it, but didn't see anything.
I'm playing on a copy of my main survival world, so even if it gets corrupted I'm good. But this does not bode well for when I eventually update it to 1.16 proper!
