I have always believed vehicles and travel to be a core part of Minecraft, and part of its fundamentals in exploration. Unfortunately, in my opinion, vehicles are one of Minecraft's most lacking features. In the suggestion forum, many threads have centered around, or featured, vehicles. This is an attempt at organizing them. The Post below has a list of vehicle suggestions, it isn't complete. If you want a post on there, PM me or comment. You can also post your ideas in this thread, and I'll add links to them.
how about a big airliner where while you wait to reach your destination you can walk in the plane jump out drive it go to the bathroom blow it up you know whatever

Maybe have one piece of string in the center and move the center feather down? Since string is fairly hard to get but no incredibly rare like gold.
We need a block that tells you when a vehicle is a vehicle. Because I don't know how it would work without.
Thruster: Turns on when powered by redstone and consumes fuel. Applies a force in a specific direction. Could be propellers like you said but I'm just gonna call them Thrusters for now.
We need some way to make all Thrusters consume fuel from one location so you don't have to physically go to every one. Perhaps...Engine and Pipes? (Say the thruster is on a wing, you can't refuel that)
Something to reduce weight. Perhaps hot air and a wool balloon.

a mass and
a center of weight
a center of mass
The ship would calculate acceleration with a = F/m, F being the total Force from the thrusters at the time(a vector value) and the mass. If the force vector does not pass through the center of mass the ship would rotate.
How to pilot the (air)ship:
You would connect all thrusters with redstone to one location(Like a cockpit). So... say you had 3 levers.
One turns on a bunch of Thrusters near the back of the ship facing back. These are your main propulsion. They push you forwards.
The second lever powers a group of Thrusters at the back but a bit to the left. When on they shift the force vector so it's not passing through the center of mass. Thus causing the ship to rotate to the right as it moves forwards.
The third one is the same as the second but on the opposite side.
Center of Mass vs. Center of Weight.
Maybe you would want the Center of Weight to be below the Center of Mass so the thing doesn't capsize.
Oh and buoyancy.
0 = air.
100 = water.
Buoyancy is determined by the volume in relation to the volume it's in.
So you would want to design your vehicle with this in mind.
When making a flying machine you would want a buoyancy of around 0 because then you don't have to worry about gravity.
A boat would want a buoyancy of around 50-75. Less bouanycy then water means it floats.
A submarine would want about a 100 for similar reasons to why flying machines want 0.
A car would want >0.
A car that drives at the bottom of the ocean would want >100.
