At first I thought you were trolling by saying that there are only red mushrooms. Then I looked closer and saw that you're talking about Mooshrooms.
There should totally be brown Mooshrooms!

So I was working on this really cool resource pack a while ago, but bad progress nonwithstanding, I think I found something much better... I'm probably gonna never release another custom Minecraft map.Until we meet again...
Bear with me a moment as I indulge in a slight tangent.
I would prefer mooshrooms stay red variety only. One reason for this is that with three cow mobs things would start feeling a little bland, especially since two of them (red and brown mooshrooms) would be nothing more than palette swaps.
But that's not to say I'm opposed to a different mob being fungally possessed. But which mob?
I think it would be best to stick with the livestock mobs, so since cows are already taken by the red spore that leaves pigs, sheep, and chickens.
My first thought was that it should be sheep. They, like cows, produce an item that can be gathered with a tool. From cows this is milk, which becomes mushroom stew in mooshrooms. So brown-mushroom-sheep could produce some kind of fungal fabric when you shear them-- ...Wait.
Shears remove the mushrooms from mooshrooms and revert them to cows. That feature should probably be kept for the new mob. So sheep are out, since shears gather their wool already. So then pigs? But they don't produce any item aside from pork, so there's nothing to make more mushroomy.
That leaves chickens. They drop eggs periodically, so those could be fungus'd up to become ...I dunno, truffles? Truffles are roundish, like eggs. And they're fungi. Perfect! Just give them some uses and we're set.
Of course, there's still the matter of a delightfully punny name for the brown mushroom-infested poultry, but I got nothin' on that front.

I think the current mooshroom needs to have a mix of red and brown (although that might make them look weird :S)
It solves both problems of not having brown mooshrooms and having too many cows
you need brown mushrooms for mushroom stew. and since they can make mushroom stew that means that the brown mushrooms are inside of them growing
Well, that doesn't mean there can't be brown ones. (On the outside) Maybe brown mooshrooms are bull mooshrooms that attack you if you attack a red one in a certain radius. I mean, there aren't any bull cattle, so 'why bull mooshrooms?', but there could be.
I support the idea of mushroom chicken, laying truffle eggs, with brown mushrooms growing on them, but still, what kind of pun can we make for chickens?

We have two types of mushrooms / giant mushrooms, but only one mooshroom to go with them.
I simply suggest there be a brown mooshroom (with brown mushrooms on its back) to keep its red friends company.
