Here's an idea for a unique pressure plate that can only detect players, and only if they're carrying a certain item.
The Dense Weight Pressure Plate would only detect players that have extremely dense heavy materials in their inventory. It would detect one of three things:
1) 1 or more gold blocks
2) 1 or more iron blocks
3) 1 full set of gold armor (only when worn)
If you aren't carry either metal block, or wearing full gold armor, it won't detect you.
This isn't 100% unrealistic since it is theoretically possible to make a scale that's only set off by intense dense weight focused on one point, rather than equal/greater weight spread out over a wider area.
It at least provides a semi-logical reason for adding a plate that mobs can't trigger. And it would allow players to avoid setting off the plates if they don't want to by simply not carrying iron or gold in block form with them.
The gold armor thing is just to provide a reason for gold armor besides showing off. You could make a door in a challenge map that only opens for people who collect a full set of gold armor from chests in separate challenge rooms.
It's not really a defense from monsters. It's just to prevent wandering mobs (both hostile and passive) from triggering plates left out in the open.
In that case, wouldn't it be easier and more practical to have a plate triggered only by players? Even though that can pretty much already be done in the form of levers, buttons, or having to place redstone torches.

Yes, but 1) that doesn't make any sense and 2) sometimes players might not want to trigger the plate. This allows them to avoid triggering it if they don't want to.
