I have a dedicated recording computer with a HDMI capture card.
That way my main pc suffers no lag from running minecraft and capture software.
and i get a true HD capture of minecraft with no dropped frames

While definitely a powerful, and effective, option (if implemented correctly) - this is far from the standard of what professional level gaming commentators (Let's Players, Shoutcasters, etc.) use - as it is a much more technically complex solution to a problem that can be solved cheaper and almost as efficiently through software and minor hardware tweaks - as opposed to a dual system setup.
I do have to say again though, it's definitely a powerful option worth looking at for later on in your recording development, as this setup can be used for both console AND pc titles, can have great diversity in the toolsets you can use, and as you said - doesn't provide any unnecessary drag on the gaming system itself. It's major downside though is indeed the cost & technical hurdles individuals must face - as you can do reasonable with FRAPs on a properly set up $800 machine, and have it get 30 fps recording, 720p (or even 1080p) reasonably well with the ease of plug & play. Where as this rig, you essentially need to be running two computers, a capture card, and the standard additional hardware, and know how to manage hooking it all up (not difficult for someone familiar with it, but definitely difficult for someone not so well versed)
I don't know if pro "let's players" use it, but i use blueberry flashback software. Free 30 day trial, and cheaper than camtasia. Also with good quality. So I recommend it.

I use camtasia and xsplit, xsplit for recording fullscreen games and my game console.
As well, I might soon be changing my setup so I have a second computer that records everything. I'm going to split my hdmi cable so that I have one going into a switch and another into my monitor. It should alleviate issues on the main computer
Minecraft = Camtasia. It's just the best.
Other games = Fraps or PlayClaw. Seriously, some company needs to make a new game recording software that does not suck.
I'm working on one. Comes with a built in video editor as well.
