Death is as much a part of reality as life. As a being, killing Death is both impossible and irrelevant. Your antagonist will be stopped by the protagonist anyway, why not just not explain HOW he would do it, and kill off the bad guy before he tries to kill Death?
If it was NECESSARY, I would say killing Death would be a simple matter as going to the underworld, trapping him, then killing him mundanely. Apparently, Death is not evil. He is not God. He is just a shepherd of souls from one life to another. Killing him would result in a classical chaotic madness of reality. In your book, you would do well to choose to either never have the antagonist kill Death, or do have him killed, then all of reality thrown into chaos until he is reasserted.
If it was NECESSARY to have a specific way to kill Death, I would say be very vague about an evil ritual of an evil religious cult. Remember to specify that Death is a shepherd, not evil. The people trying to kill him are evil. Perhaps you could argue that Death's power comes from his scythe. Separating him from his scythe would turn him into just a normal soul trapped in the link between worlds.
Just my ideas. Don't feel the need to credit me. Do direct me to your book if you publish it, though.

Well, the antagonist really wants nobody to die and create a "perfect" world, but he is so controlled by greed and power he doesn't realize what it will actually do. He also wants to take agency away from man, and I felt Death would play a pretty large role in that, as morality is linked with agency in some ways, and if one is unchanged, the other becomes loose and easy to control.
So really, the antagonist is a demon, more or less like Satan.
Also, I am planning on putting it on a forum that copywrites materials and ideas when you place it on there. Once I put the first couple of chapters onto that site I will put a link up.
Well you said that he tired to kill death, so I guess you can use some ideas that don't work but weaken it. (mlbstar's ideas)
I actually want Death KILLED, as strange as it sounds, but the antagonist doesn't care what happens to mortallity, agency, or anything, he just wants to be the one to kill Death as well as create a world without agency and morallity. He feeds off of that chaos.
Also, sorry I can't go into much detail, I am still writting and don't want this idea to be taken, so I am providing as little information as possible.

Let's say you did in some fantasy world. Who would be there to collect his soul? Nobody would be there to reap death, therefore he cheats death and continues as death.

Without knowing much about how you perceive "Death" in your work, it's hard for myself and others to come up with ways to kill a concept. Regardless, I'll throw my two cents in.
What if you have your antagonist destroy Death by becoming Death?
Your antagonist has little care to morality as you said, no? He's created his own world.
If we delve into what makes humanity mortal, it's that we have start and an end. Death is what makes people mortal. You can either have your character take control over what Death has, or prevent Death from being able to act if your character can create an immortal race. You can destroy life as we know it, therefore destroying Death in that concept.
Assuming death exist most folklore includes a creation of death so there must be a power greater than death. So if you can not kill death you could get the greater power to destroy death. The way to get the greater power to destroy death is by throwing things out of balance. You must feed death billions of lives to destroy it.
Asking how do you kill death is the wrong question. It's like asking how do you make a living person alive. You can not kill death but you can slow it to a point of meaninglessness. you could solidify it in a gel in space and send it into a black hole. This would prevent it from reaping and the eternal fall into the abyss would turn a 60 year old into a 600,000,000 year old essentially eliminating death.

If someone killed death, there would be lost souls wandering everywhere, but if you really wanted to, it would have to be in a VERY magical way, or it will just respawn and come back for revenge.
