It's so irritating when people generalize the lyrical quality of rap. Yes, there are rappers out there who spit nonsense. First off, that's not everyone. Second, so what? Not all music is meant to be thought provoking, nor does every new artist need to emulate those who came before them.

honestly, NWA is hit or miss for me. i love the first half of straight outta compton, goes hard as hell, but the other half is spotty.
kanye is by far my favorite rapper, and probably my favorite artist. i've also been messing with lil ugly mane hard, and if instrumental hip hop counts, madlib and j dilla
EDIT; Just remembered, Airospace. He's an underground cat i mess with a lot. very emotional, good flow, amazing wordplay. just wished he had his lyrics written somewhere, it can be hard to understand what he's actually saying.
Eminem - Probably my #1 favourite rapper. I have all of his music and listen to in regularly. And almost a year ago (off be 3 days) I was lucky enough to go see him live in Detroit on the closing night of the Monster tour. I've been listening to him since I was 10.
Dr Dre - Ive been listening to him a lot because of his new album and the music and I've grown to like a lot of his music. He raps so smoothly its amazing.
Wiz - Just started listening to a bunch of his earlier music and I like almost every song. He has something about his rapping that makes me like him.

Too me Kanye just sounds like he's yelling at everyone. I saw him at the Pan Am Games closing ceremonies and it was almost painful to listen to. Although his work with Jay-z with Watch The Throne was exceptional
