It should run Minecraft fine on at least normal and fast. I would use Windows 7 because it tends to have better driver stability especially in the graphics department. Valve is working on getting Steam to run natively on Linux though which could result in better graphics drivers for Linux. Just something for you to think about. Currently, it's best to stick with Windows 7.

Final question: Would it run better on windows 7, or on a linux based OS such as Ubuntu?
Also run Windows 7 less hassle with display drivers.
