You can't.
If you want to upgrade you'll have to restore it (which will put it up to date) then put all your stuff back on your ipod, and then jailbreaking it again. Which currently isn't possible.
Well, I just did that around 2 weeks ago.
I still have my jailbroken games like Infinity Blade 2. They don't open. I tap them and they just go black screen and turn off. You can still delete then after Jailbreak.

I think you are missing the whole point of jailbreaking here...
That said: once you jailbreak, go to http://jailbrea.kr every time there's a new update. If it's possible to jailbreak (untethered) the new version, then you will have to restore, then upgrade, then jailbreak, then reinstall your stuff. VERY Annoying.
These are not "jailbroken" games, these are PIRATED games.

Once i updated without restoring, and had set 3G and E off in sbsettings. Didn't understand why I couldn't browse the www on my phone for months:(
