I built my own computer in 2012, Specs are: Intel i3-2100, Amd radeon 5570, 8GB of ram, 500GB Hard drive, Antec One case, Z77A G43 Motherboard, OCZ 600W PSU. Windows 7 64 Bit.

This a really good build. I can't really think of any cons, I got you some good stuff. The GPU is the best GPU on the market right now, and the PSU is a bit higher than it should be so you have some headroom for upgrades, but not so much that it's actually harmful to your system (A 1000w PSU on a build that only needs 300w can actually be harmful over a long period of time). I got you a CPU cooler in case you want to overclock, if you don't just remove it from the list.. The case (Corsair Obsidian 650D) is a great case, lots of room and cable management is great as well, also has a side window. The monitor is fairly big (24") but the 680 (your graphics card) can easily run it. Overall, this is a great build.

I would put in a nice 128GB or 120GB SSD from either Intel or Crucial. Change the PSU to a more reliable brand, Antec's PSU's are mediocre. I'd go for one from Corsair, especially their AX Series.
I'd recommend dropping the Extreme7 Gen3 to an Extreme4 Gen3, save money and I don't think OP will be using all the SATA ports, let alone the extra 2 SATA 6GB/s ports that come with the Extreme7.

570 running every game on max settings? No.
The 570 is where the price:performance ratio drops. So I wouldn't suggest that at all, I'd suggest either a GTX680, Radeon HD7950 or 7970. All of which are in the OP's budget, so why would you stick a 570 in there when the OP has a big budget?
The Caviar Blacks are currently not worth the price, the Seagate Barracuda's are the same quality, yet cheaper.

If you are wanting to run servers (Minecraft) - 8 gb of ram should be plenty. I would really suggest kingston hyper X, as I LOVE this ram.
for your cpu, if you want to play starcraft 2, or BF3. I would suggest the amd Phenom X6, or the AMD bulldozer. AMD generally runs cheaper than intel, and I tend to squeeze better framerates from AMD generally speaking. The more cores the better for streaming.
GPU - MAKE SURE you dont bottlekneck this + cpu. If you get a good GPU, match that with a cpu that is strong as well.
For example - amd bulldozer + amd radeon 6850 >

I've had mine for a year or so and it's much faster than one of my I7's. I'm not an intel fan to be honest. You are getting ripped off of a 4 ghz cpu for half the price.
There is an EIGHT core bulldozer on newegg for 180$, an intel 8 core sandy bridge sells for 1,080 - at only 2 ghz....
Those two are pretty much badly wrong. Intel beats AMD currently 100-0. For new computer like this I wouldn't advice going with anything else than Sandies, i5 2500k is a good choice. It will beat anything AMD has to offer easily... And it will overclock like hell.
And what comes to power supply, it's not about the price -.- It's about the QUALITY of it. And it won't need to be 80 + gold, even bronze is enough. As an example, XFX Core Edition 550W is very high quality power supply with decent price. And don't start to brag about that it's not enough for that rig, it would be easily enough even for i5 2500k + gtx 580.
For single gpu computer you won't need bigger than 500W PSU, as long as it is good PSU.

AMD vs Intel argument - I disagree. My phenom SMOKES my friends I5, and my I7 for that matter. I have a bought heat sink, and I can stably achieve 4 ghz, My I7 ran me 300$ (3.2 ghz, quad core), while the 3.2 ghz 6 core ran me 150$. My benchmarks clearly favor AMD as well.

If talking about Xeon Sandy Bridge 8 core Server CPU, its a real 8 core with 16 threads at 2Ghz average, E5-2650.
FX/bulldozer has nothing on Sandy Bridge. AMD lost this year.
To the OP, go with the Intel i5 2500k. It is all you need at time being, and Z68 motherboard chipset offers some great things from it.
As far a 3TB HDD, I rather not. 1TB is more then enough in most cases. Save some bucks, get a 1TB HDD and at least a 40 to 64GB SSD and use the Intel Z68 chipset feature known as ISRT "Intel Smart Response Technology", it literally allows you to use your SSD as a huge cache for most common used files from you HDD. Over time, your boots will be insanely fast, games load fast, anything you access a lot from your HDD, will be cached for instant access on the SSD.
