Has anyone found a balanced seed with the new update? It seems like I only find 3-4 different biomes with the new update and I've traveled a lot. It's getting really frustrating trying to find one.
Seeds are generated the same as before (for PE), they just added ravines. Sounds like you've just been unlucky.
You could try using something like mineatlas.com to look at the biomes without having to travel around. It's designed for java (biomes and land masses come up right but the spawn point will be wrong but close enough), just type in the seed number. However, if you have a negative number you need to convert it (memory sizes are different, 32 vs. 64 bit) by adding 232. Just used it on my new 1.2 world and it works great.
No, megggerzzz is right. Coming from the console versions, which just got an update that has checkboxes for "biome size"" and "balanced seed" it was much better and you could find the type of seed you were looking for easier than ever before. Now its much more random and takes longer.
I know what you are going through because I was looking for a world that has a good balance of biomes for a realm i want to start. As you noted, on many randomly created worlds, you get the same 3 or 4 biomes over and over. I flew out 12,000 blocks and still saw the same deserts, savannah, and small mixed forests, but no jungles anywhere to be seen. I spent hours searching. Found a fairly good one after 19 tries.

It has all kinds of forests except I haven't been able to find mega tiaga yet. Large mooshroom biome at 2220, 830. In the SW, a jungle biome so large you won't have any trouble getting lost in it. Nice lakes too. A small winter biome to the north. Savannas and deserts to the west. Small swamps. Large oceans. I have not been able to find a mesa yet though.
I really hope they bring back the balanced seed option.
I could be wrong MuddJester, but Mineatlas doesn't work on this version of Minecraft. It works only for the current Java edition, and Large biomes on PS4 edition, and Xbone edition.

Mineatlas does work! It's not perfect, but it really does help a lot. Here's the first map from the seed you listed, completely explored in creative, and next to it is the mineatlas map. It's a little hard to see, because the mineatlas map shows a little more. But the mineatlas home is at about the upper left corner of the minecraft map. Notice the mineatlas seed, it's your seed plus 2^32.
Mineatlas predicts the mushroom biom you mentioned.
And here's the closest predicted mega taiga at -3357, 3965. I meant to include coordinates in the screenshot, but it hides with the hud.
That's how I got the number too. No other way to do it really.
I'm sorry you don't have the balanced seed option anymore, but hopefully mineatlas makes it a little less painful. You should post any good seeds you find. I'm always looking for something with at least a jungle and a swamp near spawn, with a stronghold not too far off.

Is there a way to reverse-engineer the seed numbers in MineAtlas? In other words, if I pull a random seed from MineAtlas, how do I know whether or not to subtract 2^32 to get a seed that will work on the non-Java version? Or should I always subtract 2^32?
I have used this on many seeds like the one above, and when you do it right it comes out pretty close. So without examples it's very hard to evaluate your tests. I'd be willing to look at any of the seeds you tested, but I suspect you did something wrong.
You can get the Mincraft (BTU) seed number from the mineatlas one, it's not as simple converting that way but it's not too bad. Mincraft seeds will be from –2,147,483,648 to 2,147,483,647. If mineatlas gives you a seed of 0 to 2,147,483,647, no change is needed (going both directions). If the mineatlas seed is from 2,147,483,648 to 4,294,967,295, subtract 232 or 4,294,967,296.
The reason I don't recommend using the random seed generator in mineatlas is that mineatlas uses 64 bits for seeds (what java edition uses) and Minecraft uses 32. That means there are 4,294,967,296 seeds for minecraft, but mineatlas can display up to 18,446,744,073,709,551,616 seeds. Ask it for a random seed and you are pretty much guaranteed to get something you can't use. Now, if you put in a number yourself in the right range, that would work.
I tried this again and, much to my embarrassment, it worked this time. It's not perfect. I've teleported into a couple of biomes that were a bit different than MineAtlas predicted, but they have been small differences. Probably attributable to the creation of ravines. Also, spawn points are off, as you mention above. They're not usually off by much but I have had at least one off by over 1,000 blocks (seed 257635662).
Anyway, this seems to be a great resource for anyone wanting to check out a biome before they commit to creating a world in it.

I do recommend also looking for a stronghold in creative mode. Sometimes they can be really far away. Just use the /locate stronghold command. You can look for other things that way too, you'll see the options after typing /locate in the chat screen.

Mineatlas is a website. Just use any browser to go to mineatlas.com. You can see my browser url in one of the screenshots above. Seeds entered in survival (any difficulty) or creative are generated the same, so it works for both. If you type in the example seed above it will give you the same world. It's nice because you can share a world with anyone, or you can even start in the same world more than once.

A few months ago, I found a great bedrock seed (971957955) that I gave to a realm I played on. All major biomes are within about 1500 blocks centered on 0,0. The nearest mansion is within 10000 blocks.

I had to use a scientific calculator to figure out how you got that number, lol! This will greatly speed up seed searching.

I just tested a few seeds and MineAtlas does not appear to be working with the Better Together update. This also appears to be true for Amidst.

As far as finding new seeds, I use Chunk Base (http://chunkbase.com/apps/biome-finder#971957955). It defaults to java version, but as MuddJester mentioned, you can manually enter seeds lower than 4294967296 for bedrock.
Does anyone know of a website or program that will search the bedrock seeds for you to find specific biomes?
If anyone knows of a similar seed with all biomes, I'd love to experience a new one. Thanks for sharing! =)
