As long as I can recall, playing since early 2010 I can't help but notice nearly everyone farms with the exact same method, despite there being other more cost effective ways of farming general crops. I am just curious - Why is this?

Rather than those, why don't people use this method - allowing for more crops in a very similar area?
I do, always have done. You'll also probably find it easier to place lily pads over the water so you don't fall in whilst farming. Even easier and more efficient, just place your farm on the block above water, then you don't need any holes for water.

There's also the aesthetic look. I completely agree functionality wise that using a single block water and farming the area around that is super efficient, but even I prefer a different aesthetic when I farm. Not to mention, I generally setup my fields to be auto-farmed by water. So TLDR - I think aesthetics is the reason you see lots of worlds like that.
lol nice you gave me some ideas for farming. I usually go with the simple look but I've seen people have these massive farms operated by redstone and such that is amazing. Way out of my expertise but fun to see the different types of farm builds.
I started in 2010 too! I’ve seen over the years that people for the most part stick to row farming for looks, but theres definitely a lot more people doing what you’re doing than you may realize. A lot of medieval builds I remember seeing pop up after beta used that sort of methods for large fields of wheat. I’ve seen a handful of people try to maximize the tilled soil to water, but not as often as aesthetic stuff. When i first start a world I usually just do a 9x9 derp square with a water source in the middle.
