This is very easy, all you have to do is go to the entities folder and open the zombie.json file and delete "minecraft:burns_in_daylight" function, make sure to delete the colon, two curly brackets, and comma that follow it, and in theory Zombies will not burn in daylight. (I have not tried this yet but I think it works).
Also, you can use a repeating command block and use this command: /replace entity @e[type=Zombie] slot.armor.head 0 leather_helmet
which causes all Zombies in the world, when the command block is loaded, to wear leather caps; However, sometimes they burn because the game is faster than the command blocks.

I've tried deleting the function, and I made sure to delete all the remainings, but it doesn't seem to work. I should've stated that in the post.
