Started a new save today, Was taking my first few steps when I spotted an Enderman in the distance.
I charged in bare-handed (as one does).
I had been attacking it for a bit when it stopped showing any signs of aggression. I left the safety of my tree and even hit it a couple of more times with no retaliation. The Enderman had stopped fighting back, and I couldn't bring myself to kill it.
Had walked away a fair bit when I noticed it was following me around. Everywhere I went it was never too far off.
It even followed me down into the caves as I spent the night underground.
It stuck around the next day and came spelunking with me again at night time.
Then I bumped into a creeper as I was surfacing the following morning. Can't say for sure that the explosion was to blame for my Enderman's disappearance but I never saw it again after that.

This is the only time I've encountered this bug. I would like to replicate it in the future. Anyone know how I can do so?
This sounds like an old bug where an Enderman is attacked around dawn and becomes aggressive for a short while, before becoming passive, but somehow becomes attached to you. The thread below details an experience of this, i have had it a few times now, as i recall the Enderman will teleport near you if you move away, and if you look at him he will not attack, but if you get too close he will also teleport away. I think he will only become aggressive again if you log out the game and reload.

Real good to know that logging out makes them aggressive again. I was pretty sad when I lost my Enderman but now I realize things would probably have ended quite badly if I'd kept it.
I think glitches like this and the cowl witches being neutral are things the community WANTS.
We don't WANT to be told who is and who isn't friendly.
We WANT to have more companions in the game, even simple ones.
Always thought it'd be pretty neat to be able to trade with witches. I know many players use redstone and glowstone to the point where a witch farm is warranted. Would be nice to have a more peaceful alternative to obtain those resources. Maybe through a piglin-like game mechanic.

I doubt Mojang would ever budge on this though.
There is - redstone ore is incredibly abundant when mining, especially when factoring in the drop rate, which easily makes it the most abundant resource in the game below y=16, 3.5 times more common than coal on a per-drop basis - I've crafted over 50,000 blocks of redstone at the rate of more than 50 per play session (before you say this is because I do nothing but caving; I also have not used Fortune to collect resources for years, and branch-mining is vastly more effective than caving in terms of time when it comes to all resources except coal and iron, and possibly not even that if what the Wiki claims is correct; 1.7% of blocks mined being diamond ore corresponds to about 10% being iron, 13.6% being redstone, and 17% being coal):
This was from a world from back when I still used Fortune while caving:
286,114 pieces of coal (enough to smelt over two million items or make over a million torches)
53,374 iron ingots (enough to make 1,721 anvils)
6,603 gold ingots (enough to make 91 Notch apples)
31,588 pieces of lapis lazuli (enough for over 10,000 max level enchants in 1.8)
50,166 pieces of redstone (50 km of redstone wiring)
2,772 diamonds (115 sets of full diamond armor)
486 emeralds (54 emerald blocks; 215 emerald ore mined, not shown in the screenshots)
Total pieces of ore resources mined: 431,103
Glowstone is also easy to find in the Nether due to the way it generates - fully exposed on the ceiling, and while I only collect glowstone that is easily accessible I still collect more around a thousand (4x as much dust) while mining quartz to get XP for enchanting, the byproducts of which are plenty enough to build my main base entirely out of quartz blocks and glowstone (aside from branch-mining early on I consider all the resources I collect to be byproducts of normal gameplay which just happen to meet all of my needs). One time I went overboard and collected 8 1/2 stacks in a single sitting (along with 3,774 quartz, without using Fortune), and that could have easily been higher if I only looked for glowstone - even when factoring in the entire time I'd spent in the world since I started it I averaged 780 quartz and 577 glowstone dust per hour (9,080 quartz ore and 1,688 glowstone blocks mined in 11.64 total hours of playtime).

Which version are you playing? It seems like a bug.
I play on 1.15.2 with Optifine.
