Is there any particular thing that determines when a tilled block reverts back to just dirt? I seem to notice that blocks further from the water source, but stipp within 4 blocks, seem to revert more often.

Water only works out 4 blocks. If the dirt is "dry" (no water source and no rain) it will revert back to dirt. You can grow wheat on "dry" dirt, but nothing else will grow--it just pops out of the ground.

Crops only directly pop out when the light level is too low. In fact, that was changed before 1.0.0 released, according to the Wiki.
