I am doing a lot of AFK fishing lately to get books for building up my equipment in a new world. I've been keeping all the books and combining them to get the enchantments i want as I go along but that leaves a lot of other stuff.
I generally take the true trash like saddles, leather boots, rotten flesh, and unenchanted worn bows and rods and throw them away immediately, but still have dozens of rods and bows. Looks like it costs way high to combine any 2 of these, so I think I'll start throwing away some off the really miserable ones.
Yeah, i have a couple of lava based rubbish dipsoal systems, but i also made one based on despawning over time, with a piston and you just drop the stuff into a recess, so if you suddenly realise you've thrown something by mistake, there's a button which pushes the stuff back up allowing you to re-pick it up. The lava ones arent very forgiving if you make a mistake ...
Rotting flesh can be used as doggie food, and you can trade with a cleric for emeralds ...
I stopped using "destroyers." I'd lay heavy wager that everyone has thrown something into one on accident.
As there is no need to destroy items, I just toss them into my infinite water source. Yeah, I've had to fish things back out before. Can't do that if it's lava.
My "fancy" trashcan is a pressure plate by an iron trapdoor with just a one-block-deep hole. That's all. Can't fall in and get stuck. Can't accidentally incinerate my max-enchant Mending-Infinity bow. Gets rid of the trash.

On my last world that I played a lot, I had a sorter system for all stackable stuff I wanted and a couple of chests for the leftover stuff at the end. After they filled, I'd take out what i wanted and then flip a switch to start a hopper/dispenser system to clear out all the rest into a lava block. Will probably get there in this world after I build up a few things and a permanent base.
As of now, I'm still on my small island I spawned on and just throw the stuff in the ocean (plastic pollution ? LMAO). Surprised me that it floats up and away, but as mentioned it despawns soon.
I do tend to have lava-based incinerators, but using a switch on the hopper taking items out of a chest so I can put items in the chest and check first before actually incinerating anything. Only other junk burners I use are also lava-based dropper incinerators on the hopper lines from my autofarms, to burn overflow items when the storage gets completely full, to prevent it backing up all the way back into sorters or whatever.
That said, I rarely throw anything non-renewable into an incinerator, I'd generally rather store even "useless" items like poison potatoes just in case some future update suddenly gives them a purpose. I remember when slimeballs were utterly useless and then suddenly were needed for sticky pistons, fire protection potions, and other such useful items.

I basically keep everything except the cobblestone left behind when my inventory fills up while mining.
And even then I stop and craft gem blocks and stick in my enderchest to save space, on extended mining forays I even stop to smelt gold and iron to craft blocks.
Only when I have a double chest full of saddles do I toss the extras back in my fishing hole, and I don't even ride.
I don't bother trying to save armor drops when caving though.

The only things i've ever tossed into lava were a few duplicate maps that i made by accident. otherwise i save everything for current or potential future use.
regarding your afk fishing stuff:
if you make a grindstone, you can unenchant all the items that you consider junk, like the bows and fishing rods and stuff and collect the experience from them. you can use them as furnace fuel afterwards, or combine them with the grindstone for free to make complete bows and rods et.c with increased durability.
trade the rotten flesh with the village cleric for emeralds
combine the leather boots in the grindstone for free and make complete ones to enchant

Yep!! I think a couple of cavalry platoons must have drowned in any fishing hole I've ever used. Seems over half the trash I can't use is saddles and worn-out leather boots.

Get a cactus some sand and place it in your house and throw the trash on it
I tend to keep my junk in a room of chests called "The Junk Room". That way, I can keep these so may be one day I will be able to use them.

i personally dont throw anything away, i keep everything in chests, sometimes i sort it, but that dosnt mean throwing someting in lava, cactus, etc.
I see every item and block in the game as something useful one day.
I dont care how much chests "trash" require, but im still giving every block, item i pick a chest to live in.
