By turning on creative mode you don't die even in lava.You may swim over small lava pools to quickly find new areas and also fortress.I have done this after a long struggle and found fortress in less than ten minutes.
i really hate to not be helpful, but there really isn't any specific way to find them. just keep looking. sometimes the world generation likes to be stupid and spawn very few. its all random.
Try this seed. It has a fortress and you can mine the obsidian. I found enough diamond to craft all the armor except the boots. I have an enchanting table, diamond pickaxe, and diamond sword.

These are where I found my nether fortress. be careful though. it's along way to it.

You actually always seem to spawn wthin a 100 blocks or so of a nether fortress
Here are the three way I find a nether fortress almost every time I go to nether
1. look in a circular radius of about 100 blocks of the nether portal you came from.
2 Be sure to search lava lakes as they are your best chance for encountering nether fortresses.
3 Once you've encountered a nether fortress go along the z axis and you'll eventually find more.
While not ingame mcedit can also help you find nether fortresses too, but wheres the sense of adventure in doing that?
With these tips even a noob can find a nether fort within 2-3 minutes after entering the nether. Be sure not to pass up any nether bricks as that is your nether fortress. This is all anyone will need to know. Also some nether forts may be partially buried so take that in mind as well
Why would traveling along the z axis cause you to find more nether fortresses?
Amidst doesn't show any pattern to the locations of Nether Fortresses.
BTW, Amidst maps Nether Fortresses in the Overworld where you would have to place the portal to get to that fortress.
If you click on the fortress icon Amidst will display the Nether coordinates of the fortress.

If you look at a seed zoomed out in amidst and only show nether fortresses you'll see that they are in a pattern of strings oriented north-south on the z axis. So once you find a fortress its a good bet traveling north or south will find you more in that string unless you've found an odd one that is way out in the dead zone between strips. Here is a pic I found online showing what I'm talking about:

To put it simply, once you have entered the Nether, you must walk around until you see a Nether Fortress.
It's not going to be easy, but there's a tactic I always use to keep myself from getting lost while searching for one.
1. The first thing you want to do is get a stack of disposable blocks (like cobblestone or dirt).
2. Place one block down near the Nether portal.
3. Then walk a ways out, but make sure the block you placed down is within viewing distance.
4. Then place another block down.
5. After that just repeat the cycle and you'll never get lost in the Nether while you're searching for a Nether Fortress.

Make sure your brightness is up all the way, they're made out of netherbricks which are pretty dark and can sometimes be hard to see.
