I suggest Divine RPG or Pet Bat mod cuz Pet bats are awesome, they will fight for u and u can also level them up whereas Divine RPG is a massive content mod which adds loads of cool dimensions but some of the new mobs can have a lot of health. Hope you check them out!
Feed the Beast. It has a LOT, and by that I mean a lot, of new content to offer. Sure, you might drown in epic things at the beginning, but watching some youtubers (Direwolf20) helps a lot. It might be a bit too much though.
I only use mods that add stuff I can believe could actually be in minecraft and I never like them too big like Technic. Some mods that I am currently using and I enjoy a lot are Primitive Mobs, Utility Mobs, Gems+, Ruins, Pet Bat Mod and Not Enough Items helps you with the recipes.
I recommend also getting Smart Move... the main lure to it is the ability grab onto ledges and pull your self up, and crawl through single square holes. It also changes the way you swim to be faster and with an animation to match.
I really think Smart Move should be integrated into normal minecraft.
Dude. Just try FTB.
I know you said you sucked at Tekkit/FTB, but I already have a full quantum suit and when I started I was a noob.
Once you start, you find ores and seeds and such. Then you look at the wiki for FTB and look at how basic stuff works, and thats how I learned. Once you get everything working and you're stuck on something and you can logically tell yourself 'this is the output, this is the input. the input goes through the output through the chest' for say.
I agree with the Mo'Creatures mod.
I don't usually go for mods, but when I saw this mod I had to make an exception, being an animal lover.
It's amazing. Adds so much life to the game, both hostile and friendly.
I'm a big SSP Minecraft player, so I work to find things that make it interesting. There are two I've found recently that I really love.
The first is the Herbology Mod. It is a mod that adds in a pretty great handful of new plants to farm, a couple of new tools and a new way to craft a brewing stand (among other stuff). It is great if you like the farming side of Minecraft. It is really great, in my opinion.
The second mod I've found and loved is MrCrayfish's Furniture Mod. It adds in support for tons of new furniture (something Minecraft has been lacking!). There is even extensive kitchen-related recipes, including cabinets to store things (and look better than a big chest hanging against the wall in your house).
I recommend looking into both of these mods (which require Forge and its ModLoader-esque FML [which comes with it]) if you want to enhance your SSP experience without altering the feel of it too much. :-)
