That's what literally all the other biomes are for. There are plenty of reasons, both survival and technical, to want a biome that doesn't spawn monsters.

You can shear mushrooms from them and they turn into regular cows. They may drop mushrooms, but I'm not sure.
As for the original question, many people like them because of the giant mushrooms. They also may like the look of mycelium. And then there's the mooshroom thing.
More mushrooms mean more mushroom stew, an item similar to a golden apple.

I forgot to mention that mushrooms can grow in the sun when planted on mycelium. Otherwise, you would need to plant it in the dark for it to grow into a giant mushroom.

I prefer potatoes or cooked meat/fish myself, both for the XP from cooking it and the large amounts of food points and saturation in convenient stackable form. But mushroom soup became a much more useful option than before when they recently changed the recipe to be shapeless, meaning you could finally make it in your personal-inventory 2x2 crafting grid rather than needing to place down a workbench to access the 3x3 crafting grid. You'd still have to use 3 inventory slots to carry a stack each of red and brown mushrooms plus a bowl, but you can carry a LOT of food and saturation points that way. Still not quite as good as 3 stacks of steak or pork chops, of course.
Mooshrooms are also an interesting option for places like XP grinders where you rapidly burn through saturation/hunger points while hitting mobs, but can keep a penned-in mooshroom and a bowl for easy-access infinite food as long as you are in that particular place.

Giant mushrooms can also be useful for aesthetics (they generate in mushroom islands). Mining the blocks with shears or silk touch will allow you to take the block itself, while mining normally has a chance to drop more mushrooms.

That is a slight advantage for me, cause... I'm playing in 1.14, we have this Shipwrecks, and you can find potato inside a shipwreck chest.

Eh, I don't find a mushroom island yet, I already traveled 2048x2048x6 blocks in my world but .. no mushroom islands yet lol, I rather stay on my mega taiga biome with Brown and red mushrooms over the ground.

Beta 1.9 Prerelease 3 Mushroom stew can now be crafted in the 2×2 crafting grid in the inventory.
In fact, since then they nerfed mushroom stew, which previously restored as much hunger as steak (if not as much saturation, assuming it had the same ratio as now); even then I wouldn't consider it to be worth using as a main food source due to the stacking issues/additional inventory slots/crafting needed (although I have eaten it while mining quartz in the Nether, as there are plenty of mushrooms that can be harvested when needed, and even slowly regrow if you leave one, and inventory space isn't as important as while caving):
1.4.2 ? Mushroom stew will now restore 6 Hunger instead of 8.
I found many players love mushroom islands but I don't know why.

How is it similar to Golden apple?
If I recall correctly, it gives slight regeneration when eaten. That may have been removed, though.
At any rate, it is a very good food source as it gives a lot of hunger points with good saturation.
