-Emeralds.... well in survival i live in a village and it has been so useful, i can get 30-45 XP for one emerald and have myself a full enchanted armor!
-Gold, I agree that gold tools and weapons sucks! BUT! gold is not only for crafting tools and weapons it can be crafted to golden apples for reviving zombie villager or healing yourself, golden carrots to breed horse and brewing! and powered mine cart rails or clock and more stuff.....
But if you are asking for the useless item stuff
is Dead Bush, Cauldron, Sponge....

I think the most useless item is air. It is an actual item, the item id is 0.
You do realize that if ItemID0 did not exist, the world would have nothing to put in the empty blocks and everything that was meant to be an air block would become a Stone block since the world would render the next valid block (ItemID1) to replace it?

Cauldrons are pretty useless if you ask me. An I.W.S. (Infinite Water Source) can be made to look nice, and it's not always 2x2. You can do 3x1, and make designs with both of those. Cauldrons run out of water and constantly require to be refilled. They are useless, but the most useless thing in Minecraft, in my honest opinion, is nothing.
Everything in Minecraft has a purpose, even the horrific sponge block.
I'd say mycellium (Or whatever it is sorry for spelling), because it has pretty much no use except keeping the mushroom biome in place, which could easily be changed to dirt, and it invades dirt so farming in mushroom biome is pretty hard.

The quiver is only a texture, so it may not count. The sponge is not attainable in survival, so, again, may not count. The dead bush is completely useless; it's not even aesthetically pleasing. The shrub is basically a dead bush, but can be placed on grass; it is not attainable through any means (as far as I know), but its ID is still there. The fern isn't very aesthetically pleasing, and it just gets in the way. The emerald is used for trading, sure, but the trades are horrible; after going through all the trouble to find an emerald, a villager gives me only six bread?!
So, those are all of the most useless items in Minecraft. May be more, but I must not notice the uselessness (or the item).
well you can search for a villager that would trade 19 wheat for 1 emerald like i did!
and i found a villager who would trade me 1 emerald for 4 bottle o' enchanting!
To all the people saying gold tools: The gold sword is actually quite useful. It has a great chance of getting looting 3. If you use it with an animal farm like xisumavoid, it won't need durability as it will last forever. Just throw a damaging potion and quickly switch to your sword. As for my most useless item, dead bushes. Until they add a use for them, it will stay like that.

Mycelium is anything but useless. I have seen some actually aesthetically pleasing stuff that uses mycelium. It is used to farm mushrooms. Although it doesn't have many uses, they are some good uses (besides aesthetics)
Definitely agree with many that the most useless overall is the dead grass. It's just there for looks. For me personally, the next most useless is redstone. I never have any real reason to make anything that uses it. Maybe some day I'll think of things to do with it, but I'm just really boring. I do at least have some use for it now, with Redstone Blocks. I use a custom Painterly texture pack, and all my ore blocks look like purple obsidian with somethig space-themed set into them. Redstone is a comet, emerald is stars, lapis is a planet, etc. Going to use them to make my magic room.
Well, I'd have to say that gold tools are more-or-less useless unless you enchant them. However, I don't enchant much, so iron and stone tools are more useful to me.
I would also say that flint is useless once you have a skeleton farm unless you use flint and steel a lot. I hate fire in MineCraft, so I barely ever use a flint and steel. Feathers also fall into this category since they are only used for very few things (arrows and the book and quill), and the book and quill isn't useful to most people. (I suppose some people probably like it, though...)
Actually, the book and quill might be the least useful item in the game since its job can be done by a text file and a text editor. In multiplayer, it might be useful to have a book and quill to be able to transfer text easily, but that's really the only use I can see for it.
Leather armor also isn't very good. I mean, a full set gives 5 half-shields (I think) of armor, whereas a full suit of iron armor gives 20 half-shields and gives good damage reduction per half-shield. (Each type of armor gives a different amount of damage reduction per half-shield of armor. I've confirmed this by reading the code while working on a mod project of mine. The effect is subtle but it's there.)
Wooden tools aside from pickaxes (for the first bit of stone) and hoes (since you don't need them for much) are more-or-less useless, too. (On the note of hoes, though, I tend to use stone hoes rather than wooden hoes since I like the extra durability. Plus, my fields are often quite large, so only needing to make 1 hoe is nice.)
Those are my thoughts on which items are the least useful. I don't think many items are necessarily useless, though. (Sponges serve no purpose and are ugly as heck, but you can't get them in survival so I really don't count them. ) I guess some of them are useless to some people (for example, some people don't want to use a book and quill, so that item is pretty much useless for them), but otherwise they all have some use, even if they don't have much use.
