Well, mine is a variation of the Paulsoaresjr style. Deal with it. Part of it is because of Direwolf20 though, it's the torches-next-to-the-pick thing.

Hmm, interesting. I use both my scroll wheel and number keys to select things, depending on whats going on. I usually put my tools and resources in this order:
1. Sword
2. Pickaxe
3. Shovel
4. Axe/Fortune Pickaxe
5. Fortune Pickaxe if Axe in 4th slot
6. Cobblestone/Dirt
7. Water Bucket
8. Food
9. Torches

This is my current hotbar on my own server, and how I usually have it on everything else
Left to right:
1: Sword (sharp v unbr 3 loot 2 fire asp. 2)
2: Bow (power v punch 1 flame 2 unbr 3)
3: Food (steak usually)
4: Speed pick (Eff V, unbr 3)
5: Cobble (1 stack)
6:Fortune Pick (fortune 3, eff 4, unbr 3)
7:Water bucket (I catch on fire a lot)
8: Ender pearls (16)
9: Axe (eff v, unbr 3, sharp v; It's my enderman killer, because it doesn't set them on fire.)
All tools are diamond
Also, for your poll, I really use both. If I need to quickly switch to, say, my sword to kill that creeper that fell inches in front of my face, I react quicker with my scroll wheel. If I'm building, then I'll use the number keys, as it allows for quicker selection of non-adjacent slots.
(I had also thought about mapping the two thumb buttons on my mouse to switching the hotbar, like the bumpers on Xbox, but I figured it's really not necessary)
I have no particular order, but i generally have all tools close to one another, and also torches directly next to them, food after that. After that is the blocks that I am using, either that or just junk.
For example:
1. Sword
2. Axe
3. Shovel
4. Pick
5. Torches
6. Food
7. Cobble
8. Wool
9. Planks

I've started experimenting lately by switching out the shovel or axe with a bow, and it's seemed to work well. I always use this arrangement, for a couple of reasons. The sword is closest to the pick (my most used tool) so I can react quickly in an emergency. The axe is on the end, so I can break leaves when mining trees with an adjacent block/item, because I can't stand using an axe to break leaves. The shovel just takes the empty spot. I've noticed that ChimneySwift11 uses the same layout, and I didn't knowingly copy him.

Just keep your scroll wheel on #2 (the sword) to stay safe. Scroll up once for sniping (bow) and one more time for force field (water bucket)!
Torches are placed between the sword and pick: good when mining in dark, dangerous caves.
Axes are not used regularly; only when going on a forest cutting spree!
