Some of these are rip offs, if you have 16-17 emeralds you have been trading a lot o:
Trading is designed to make you exploit the system. Over half of the trades are useless and require you to kill the villager to breed a new one with a better trade. It's also not difficult to get stacks of emeralds once you get something like a reed farm set up to trade stacks of paper with.
Currently the trading system requires a lot of setup and creation of specific systems to use properly while it was intended as a convenient way to get rid of some resources you don't need. Thanks to simple math and bad implementation, the intended effect doesn't really work out.
What I don't understand is why (I only looked at diamond tools) different tools requiring the same resources require different amounts of emeralds. Fewer emeralds on average for a hatchet than a pickaxe, while they both require 2 sticks and 3 diamonds?

Indeed, it needs a bit more work. It also needs more trading options. For example, the butcher should buy cow hide. Perhaps even add a few ne types of villagers like the baker or the fisherman...

Most of them are rip-offs, but it's pretty easy to get a ton of emeralds. Within the first half hour, I already have over a stack of emeralds. I traded a ton of paper and wheat to get most of them.

Now to break all the chests and throw all the wool on the ground near my feet.
Then trade them all to a farmer buying 14 for one emerald. Should have 9 stacks after that. (Couldn't find a librarian T_T)
Diamond Helmets are the best bang for your buck. You get 5 diamonds for 7 emeralds. Swords are the worst. 2 diamonds for 11-12 emeralds.
But with that stack I'll probably make a piston door out of emerald and then buy 3 sets of armor and some tools.
