MineCraft is very limited in terms of biomes and is not as realistic as the world today (in terms of waether and architecture). If I really had to think of one I would say New Vancouver. Vancouver is just at the west coast of North America and is also well-known for its rainforest areas.
New California sounds better if you prefer sunlight.
