Normal. Very rarely I go to peaceful for building things. But usually stay in normal. If its a very large project I may go peaceful to not have to hassle with beds/fending monster off/whatever and can just keep working. (For projects that take upwards of 3+ hours) All mining/exploring/everything else is always done on normal.
Might try Hard/Hardcore at one point, but I'm still "new" in a way and have a lot to still discover(played a while back, but was gone until only a few weeks ago. Last I was playing was before pistons)
I played on Peaceful when I started, to get a feel for the controls and how the game worked. These days I play on Normal almost exclusively, unless I'm doing something in Creative and don't feel like having slimes all over the place. I don't like Hard because there are too many freaking Creepers and I hate using iron doors.

I normally play on peaceful, because even on hard mobs are so easy to kill it just becomes annoying running into them every 20 steps. Other than that it would be because I don't want my piston mob trap to be operating all the time or I'll have to make a ton of repairs.

I used to play on Easy, but now I play on Normal because Easy is too easy. The only time I ever play on Peaceful is on Castaway Island because when I played it on Normal a stupid creeper blew me up. Besides, I want to complete all the challenges on that map, because I can't do them if creepers try to blow me up.

I said this. Two days later, my computer's motherboard melted down and I had to get a new one with Windows 8.
Peaceful mostly. I like to build uninterrupted, and mob noises in caves, etc. make me paranoid.
I'm not quite satisfied playing on peacful though.
I just need to get over my silly fear of death.
I play on Hard difficulty. I'm tempted to play Hardcore, but sometimes death in survival can be punishing enough without losing everything, and I often spend a lot of time on my houses, bases, and other structures.
