For iron, I usually just cave, and coal is like EVERYWHERE..
For redstone, I find more than enough in my obsessive Diamond Mines, and for Diamonds...
I wish I could show you layer 11 of my map.
I go straight down to level 11 and branch mine 2x2 tunnels. I mine stone and coal with stone tools, anything better with iron. I try to always have a fortune 3 iron pick for diamonds and redstone. I tried using iron instead of stone for a little while but I didn't think I got a good enough return on mined iron relative to the iron spent on pickaxes so I just switched back to stone tools for lesser stuff.
For me I usually do extensive branch mines, and by extensive I mean 500 x 500 x 3 levels going from head level 12 up.
I don't mine because I need stuff, I usually mine just because I find it relaxing, however having a crapload of diamond blocks is a great thing when it comes round to making all those beacons.
In my new world I am just planning out a 256 x 256 branch mine at the lava level to get enough redstone, coal, iron and diamonds to be able to get ready to make the enderman farm and iron farm, you know...all the fun things that allow for even more fun things.
I usually find good caves for coal and iron, and branch mine for redstone, gold, diamonds, etc. I haven't tried using quarries though

Branch mining with three blocks between using efficiency and unbreaking diamond pickaxe, with a fortune at the ready to harvest diamond, emerald, lapis and coal (no kill like overkill). Chest minecarts take the ores back to my sorter and storage, one chest cart has the supplies I need to stay down for as long as I want. Branches are 200 blocks because that means I dont have to leave to much cobblestone behind.
All caves I find gets fully explored, lit, and stripped of ressources.
I like to branch mine. I typically go down to level 11, sometimes 12 but I've decided 11 is slightly better.
What I normally do is make a water drop and pick a direction to dig until I hit a cave or lava pool, then I'll reverse and go in the opposite direction until I hit another obstacle. Off of this long strech, which will be my main access shaft, I dig out 1x2 tunnels ever 2 blocks over and I always offset them at the main branch line so you can never accidentally run past your access area.

I find mining relaxing as well, and I really obsess over getting my first pair of working picks, Eff IV Unbreaking III and any Fortune III.
I really prefer to mine with just an Eff IV Unbreaking III Silk Touch I pick, so as not to risk the fortune pick. Silk touch also has the advantage of compacting lapis and redstone a lot.
I've recently tired caving late game again and I don't find I can get anywhere near the same yield/hour as branch mining. Early in the game, before I have a fortune pick I do a lot of caving to pick up a lot of coal and iron and hope to find a dungeon for xp farming.
I've seen a lot of people's branch mines where they go down and/or up and mine again, but I've usually just used a nether portal system to easily transport myself a nice distance away and set up a new branch mine. I suppose I definitely should fully mine out an area one of these days!

Tossing thedirt and cobblestone to my kids to build a house/wall around where we are.
I get the turtles and quarries from FTB but that Minutor. That's just cheap.
