I surround my portal with a chamber of cobble, a door, and add a chest with some wood, cobble, emergency wood, emergency crafting table, and flint & Steel.
I usually do this same thing, although at the top of the room, I build a tower with a ladder leading up to the upper bedrock layer and relocate my portal and room a few meters below the bedrock. This allows for the very easy building of rail tunnels across the "ceiling" of the Nether.
I've gotten to the point in survival where the nether is just childes play... when going to the nether, I bring:
Bow
Arrows (several stacks)
Diamond sword
Diamond armor (usually enchanted)
food
torches
Diamond pickaxe with Fortune III
Fire resistant potions
so me dying in the nether is very highly unlikely... I don't bother covering up the portal... and then I go search for a nether fortress and due to the latest update or last update 1.5 I now go mining for Quartz lol (hence the "Diamond pickaxe with Fortune III) lol... so yea... not scared of the nether at all...
You should get a silk touch pick for mining quartz then. Fortune III fills up your inventory way faster, Silk Touch allows for more space in the long run.

i thought mining the quartz and turning it into blocks in your inventory saves more space?

Things I look for in a fortress specifically include a blaze spawner and netherwart.

I agree, usually get hit by them once but thats because sometimes they're sneaky but 2 shots with a bow and they die lol....
