If they actually fired AT you, it'd be relatively easy to get into a position to deflect their shots. But they don't do that. They fire at some random point above and behind you, so it's next to impossible to find the right place to stand so that you can deflect their shot anywhere near where they're going next.
They're not very strong. They don't have a very high rate of fire. Their attack really doesn't do much damage if you're properly armored. But their comically bad aim makes them nigh unkillable without a bow. That's not good game design, that's nintendo hard. Also with multiplayer lag now present in the single player game, you have to click three or four times within the window to get the game to actually acknowledge that you punched the friggin' fireball and not just be like, "Nope, you're hit."
I usually just ignore Ghasts, unless I am building bridges in the nether. Then all I do is wait for them to fire, and just step out of the way.
Now if your wanting to farm ghast tears that is a whole different story ...
If you just keep walking forwards, it's almost impossible for a ghast to hit you. Also by simply standing still. The only time they're a threat is when you're making a bridge, or fighting other mobs.
I would love if they could aim farther down, more so at your feet.
That's exactly the problem. If you wanna just let them light up the nether around you, that's fine. If you actually want to end the threat without just playing Peaceful mode, you need a bow (which still isn't easy 'cause they change directions at random) or you need them to be at exactly the right level relative to you, with enough room to maneuver, so you can get to the spot they're actually aiming at and deflect their shots back in the direction they're going. Now if they actually made an effort to hit you directly, it would be much easier to position yourself correctly and take them out. But they don't do that.
If they want ghasts to be difficult to deal with, I would prefer it to be because they're clever, not clumsy.

This is the one that really gets me. Being in a position to deflect the shot has never been an issue. I mean, their aim's bad, but it's not that bad. It's not like you have to run around and parkour your way up a mountainside just to get hit by the fireball. Looking up from what you're doing and a well-timed little "hop" is all it's ever taken to be in the right position. No, the real issue is the lag and, previously, their meandering nature makes it nearly impossible to accurately gauge where they're going to be in ten seconds when the fireball gets back to where they are. It's hard to "lead the target" when the target is just drifting around randomly.

You know when you do deflect it, it just aims straight at wherever your mouse is pointed, yeah? It doesn't really matter where you're standing at all, as long as it's in the way of the fireball.
I have to wonder if the poor aim is due to the trajectory of their shots being calculated from the bottom of their rather large hitbox, however the shot actually from higher up at their mouth and thus the shots are always a little high.
It requires timing to deflect a ghast's fireball, but it's easy to master and effective as they instantly die when they get hit by another fireball. Even if you don't have a bow, they shouldn't be much of a problem.

I think that their aim is off because their attacks explode and do damage in an area making it hit you even if they miss. Also to make them harder to kill
In my opinion, ghast suck because of there screams they make. Gosh it's so annoying>

Picture it. A young boy's first adventure into the Nether, playing Minecraft on his laptop, when nothing other than the devil's child itself floats along and lets out the most terrifying screech you've ever heard.
Let's just the new laptop cost a bit of money. Conclusion: Ghasts = meanies.

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.
