Not making it up, but I admit I haven;t personally verified it. I have been working with another player in SMP who has built villager cities. He has removed wheat fields from a population and saw effects on population. He rebuilt them and saw the population increase again. I have no reason to doubt it. We have started building new villages and transfering villagers. Had trouble getting them to breed as well, so built a wheat field (as well as more homes/doors) and they finally reproduced.
Villagers will breed until the number of adult villagers reaches 0.35 times the number of "houses." Any baby villagers will then grow to adulthood but no new babies will be born, bringing the total number of villagers to somewhere about one-third the number of "houses."

"both sides" here means front and back, not left and right. For a super-easy way to increase your village's population, don't bother building new houses, just line doors around the outside of the existing ones. Just right up against the wall, they don't have to go anywhere.

The game checks in front of and behind a door for roof blocks to determine if it s a house. It does not check to the sides. In your example if the door is facing north-south, then it is a house, since there are two roof blocks on the north side and none on the south. If it's facing east-west then it is NOT a house, since there are two roof blocks on the east side and the same number of roof blocks on the west side. The blocks NE/NW of the door do not matter at all, just the ones directly in front of or behind it, up to five blocks away, and at any height.

Sounds like only one of them had the hearts. When two villagers (or any mob that's capable of breeding) are in "love mode" and within range of one another (they may need line-of-sight as well, I'm not sure) they will pathfind to each other and then "kiss" for a few seconds which then (usually? I've never seen it fail) results in a baby.

Either that or they were hot, just not for one another. I had about 12-14 of them locked up in secure room and every so often would watch what's up. There were hearts everywhere and having them crowd one stupid corner in an otherwise huge room made it look like there was some heavy petting going on. Alas, often no babies were made.
I tried building a house in the village on time, worst idea ever.

They can't get through trapdoors or iron doors though, only wooden ones. You can use either of those to keep villagers out of your house.
I once had the exact opposite problem, I built a six-story setup which I had calculated would bring the number of villagers to exactly 16, in order to finally see a natural iron golem. It worked, but the villagers just kept breeding. By the time I got bored with that world and deleted it, they were still breeding. It almost seemed like once I got to 16 there was no cap anymore. I never did figure out what happened with that one.

It doesn't differentiate between "front" and "back," just between "front-to-back" and "side-to-side." For example it doesn't matter if the door is pointing "in" or "out" of the house, but if you put it sideways in the doorway it will not count (it might not, anyway, because it will be checking in the other two directions for the number of "roof" blocks.)
