None. Even if I don't like a particular block, someone else might like it and removing it would ruin his day. Who am I to decide what Minecraft should include. I'm just one customer. And gravel is cool! You get flint out of it and you can actually use it to make decent looking roads and such. And it can make for some very cool traps.
I haven't encountered a block so far in the game that had me going "This is horrible, it's making my experience of the game less awesome because of it's mere existence, it should go away.
The only block I felt was kinda wasted completely was lapis lazuli, until I found out my texture pack made lapiz blocks look awesome. Now I use it for decoration. And with Fortune III I get nearly two dozen lapis ore from a single ore block, which I can convert in a little over 2 decoration blocks. It's sooooo pretty.
Guys i want you to think. If you could remove 1 block from minecraft what block would it be. I would remove gravel!
And never get any flint for arrows and flint and steel! And work counterproductively, removing features instead of adding them! and write in giant red text that makes our eyes bleed!

I hate gravel, it's annoying and oh so ugly. Any time I take over a village one of the first things I do is rip up all the gravel, install cobblestone, and throw said gravel into a lava pit.

If I could remove one block, it would be dirt. Because just because I don't like how dirt looks, I want Mojang to remove it, despite it's practical applications. Removing dirt includes grass too. Seriously, dirt is so ugly. Dinnerbone needs to take it and its horror out of my game, now!

The reason i dont like gravel is because it slows down mining when it keeps falling down!
So, we should obviously remove stone, lava, obsidian, water, monsters, the hunger bar, etc, am I right?
Nothing will get in the way of our mining!

I hate the way end stone looks, it just doesn't tile very well. But I don't want them to remove it. If they wanted to change it, however, I wouldn't mind.

But would you honestly say yes to removing it? and use lava every time you want to go to the nether, per lack of flint and "steel*"?
*Said steel is actually iron.
To the people saying sponge, you have to remember it isn't REALLY in the game. I mean, sure, you can nab it in creative and use hacks in survival to get it, but it doesn't really hurt you by existing does it? One day it might even be useful!
I don't think blocks should ever be removed, unless somehow they manage to diminish the quality of the game. Like, I dunno, a block that instakills you if you step on it. Or look at it. Or even think about it.

I want to remove the giant mushrooms until someone who can actually make a texture that doesn't look like crap (i.e. not notch) decides to work on them

Allocators are no longer the future, we have Hoppers now. I still like them, though.
Guys, chill yo titties, it doesn't nessacarily mean they'll be removed! Jeez! If I had to choose, I would definetley get rid of the Mushroom blocks. They're just so... Silly! Mojang were obviously having a slow day when they came up with that idea
Gravel is good for roads, plus it has it's piston contraption uses (along with sand).
If I had to remove anything, it would be sponges. No use, no purpose. The only thing they're good for is retexturing them into other things for decoration, but even then, it doesn't work well, because of the fact not everyone has that texture.
