I was searching for the closest stronghold by using the eye of enders. I found the spot where the eye wouldn't go anywhere, just down to the ground. I dug there and ended up hitting bedrock. No stronghold. So I dug out a large horizontal area at about level 20 and threw another eye of ender, and it went to the same spot that I had mined down to the bedrock.
What happened? I really want to find a stronghold, but even when I travelled far away and tried again, the eye of enders took me back to the same spot.
Any advice or insight would be greatly appreciated!
Is this a world that was originally generated in an older version? If map or structure generation changed between the original version and the version you are playing now, it could affect where the eyes go.
What version was the world created in?
What is the seed, and coordinates the eyes are leading you to?
Wow, that stronghold is quite the mess, but an interesting one!
The stronghold is mostly overwritten by a huge mineshaft complex. It makes for a convoluted maze, but it looks like it would be both fun and challenging to explore. The two complexes are so intertwined that there are tracks on the stronghold bricks in some areas, and there is even a loot-chest minecart in the portal room!
The spiral staircase, which is generally considered to be the entrance to the stronghold, is under an island at -1261 62 708 (dig down from there). If you'd like the coordinates of the portal room, just ask.

Could you recheck those coordinates of -1261, 708? I dug straight down and did not find the spiral staircase. It also didn't seem to be on the island. And yes, I would love the coordinates of the portal room, if you could include the level, I would greatly appreciate it.

Are you sure that your world was created in 1.9 or later? They changed the locations of strongholds in 1.9 and that is the only reason I can think of for there not to be one where Eyes of Ender take you, besides using a world type different from default, as their locations are partially dependent on biome layout (if you accidentally disabled them when making a custom world Eyes of Ender would not work at all).

I looked and 1.9 was released in February 2016. This world was created perhaps 6 months ago. I never played Minecraft before that.
If they only made diamonds more common it would have no effect on strongholds or any other structures, and if strongholds had been disabled Eyes of Ender would literally do nothing (not leave your hand when right-clicked).
You could try finding another stronghold, which requires that you travel quite far since in 1.9+ they are at least 1408 blocks away from the origin (0,0) at 120 degree angles (for the first three; there are a total of 128). I'm betting that you generated the chunks you "found" the stronghold in in 1.8 and did not look for it until now and the game thinks there should be one based on the current version (though it should have recorded the locations of the 1.8 strongholds so it can still find them; likewise, 1.6.4 was released so their locations were remembered after upgrading to 1.7). To find another stronghold try going north or southeast (about 120 degrees away) starting at the origin and Eyes of Ender should start pointing to one of them once you are no more than 600-700 blocks away (presuming they are at the maximum allowed distance, which is up to 2688 blocks away from the origin or 4134 from the one you found; this means that you need to travel up to 2067 blocks before getting closer to another). The second ring of strongholds is quite a bit further away, at least 4480 blocks, with the rest as far as 24192 blocks away, and I doubt anybody has ever explored the entire region out to that point.
Also, if you did start the world in 1.8 and don't mind cheating a bit you could look up the locations of the original three strongholds, which are 640-1152 blocks away and may have been generated if you explored enough to generate terrain where the 1.9+ strongholds would be*. Remember, world type does matter, which is why the link includes Large Biomes as a separate option (note that there are no options for custom biome sizes but a Customized world with a biome size of 4 is the same as Default and 6 is Large Biomes).
*Here is a comparison between 1.7-1.8 and 1.9+, both set to default; notice that the strongholds in 1.7-1.8 easily fit within the area of the closest 3 in 1.9+, and would also be similar to your world because the stronghold to the southwest has a similar angle as the one you found, hence why I said to go north or southeast. Also, a stronghold located on the second ring may be closer to the one you found, but further from the origin:

You probably meant 1.19 (always make sure the version number is correct - there is a HUGE difference between 1.9 and 1.19) and are on Bedrock Edition (which has a "show coordinates" option, otherwise on Java Edition you just need to press F3, and no, this makes no difference at all to world generation) - Bedrock is infamously known for its bugs (I often see it referred to as "Bugrock"), including missing or incomplete strongholds (no portal), but this can also happen in either edition if you upgrade an older world since if the locations of strongholds change the game will not retroactively generate new ones in existing chunks, and may forget about old ones (this should have been fixed in 1.6.4/the equivalent for Bedrock but it is possible that the data gets lost through updates of existing worlds, e.g. 1.13 saved how they are saved with the world). Fortunately, there are more strongholds (infinite in Bedrock, 128 in Java); your best bet is to travel in the opposite direction from 0,0, or at least 1000 blocks or so, until Eyes of Ender lead you somewhere else.

I'm not sure what version it was created in - maybe 1.10 or 1.11?

OH! My daughter created the world and I think she made it custom so that it would have more diamonds....
Does that mean Eyes of Ender don't work? If so, that stinks! I built a blaze farm that took me forever. So I'd have to do it all over....

I spoke to my daughter and she said she made the biomes extra large, and increased the size and spawn rate of gold and diamonds.
But you are correct in that the eye of ender did work when I threw it.
I don't know how this world could have been started in 1.8 unless the software wasn't updated back when my daughter started it about 6 months ago.
I will check the locations of the original 3 strongholds and see if can get me somewhere.
Although this doesn't answer the question ... why did the eyes of ender take me to the wrong place to start with?
I found it!!! I used the stronghold finder and set it to 1.9, large biome, and it worked!
