Unfortunately, this is pretty much the only viable strategy (due to a lack of others) since that's all the combat system is. :/
Besides stealth, of course. I try to get the first strike, and in combat I usually do. Not to mention that if I'm the one engaging the fight, I can choose not to engage if the other guy has significantly better gear than I.

One is a semi-popular technique called 'blockhitting'. What is it? A semi-popular technique, where you spam the left and right mouse button. It blocks incoming damage, and deals damage at the same time. It takes a bit of getting used to, but once you master it, it helps out a lot.
Another one is the basic strafing. You sprint around the opponent, and try to get as many hits as possible until they hit you. It takes a lot of getting used to, and I use it at the start and at the end of a fight. It helps to have 150+ sensitivity when using this strategy.
when i see a skeleton sometimes i just place two blocks infront of me and wait for the skeleton to come towards me. but when im fighting a creeper with a diamond sword i just walk into the creeper and hit it usually they don't blow up.

Pick your battles. If something gets in your way, kill it.
I get my XP mostly from mining and/or farming a spawner. So mostly I just stand still and hit with a stone sword... or stone pickaxe.
Things I can't easily reach: I shoot them with arrows.

Shoot with arrows at range and hack with swords closer in on the downward part of a jump.

Creepers: Charge and hit twice by clicking fast, back up immediately. Repeat
Zombies: Jumping for crits
Spiders: Jumping for crits
Players: Splash potion of weakness (make sure it doesn't hit you), Strength potion on yourself. Strafe and crit!
Remember, clicking fast does more damage than holding the button down.
